Inspired by Paleo Parents I decided to make a quick, easy, gluten free vitamin packed snack for my picky older kiddo.
These are date based, and, while dates are high in (natural!) sugar they are rich in dietary fiber, antioxidants and the essential minerals potassium and magnesium. I’ll choose dates for sweetness over processed white sugar any day!
1 cup pitted dates
1/4 cup sunflower seeds
1 cup dried bananas (you want good quality, as few ingredients as possible, and no added sugar)
2Tbsp. chia seeds (or a nice chia flax blend if you have it)
Toss the above 4 ingredients into the food processor and let it go for awhile. You’re not looking to make it thin and smooth, this will stay rather thick and lumpy.
Pour about 1/4 cup shredded unsweetened coconut onto a plate, and roll your date/banana mix into balls, and coat in coconut. Keeps well on the counter for a few days, but kiddo said they were best cold. He loved them in his school lunches, and I felt good about a nice, healthy sweet snack.
