Who doesn’t love breaded, fried, delicious chicken tenders? But, in a mostly gluten free, low carb household chicken tenders aren’t exactly friendly to most of us.
At 3 net carbs for 2tbsp of coconut flour, and 2 net carbs for 3 tbsp of unsweetened coconut, these work even for me!
Try this tasty alternative to get your chicken tender fix!
I used 4 large chicken breasts, cut into strips. This made dinner for the four of us, and lunch for the husband the next day.
Throw your chicken in a bowl with one beaten egg and coat well.
Heat up some good quality oil in a large skillet – olive oil or coconut are my usual choices, I used olive for this so we weren’t overwhelmingly coconut.
Mix together 3 tbsp coconut flour, 1/4 cup shredded UNsweetened coconut, pinch of salt, a little pepper, and a dash of cayenne pepper. Really any spices you enjoy!
I threw my coconut mix in a ziploc, placed the egg washed chicken in there, and shook it up. I have kids, I go for quick and easy. You can be tidier and dip each piece from egg wash to flour mix bowl, both work.
Fry in pan until crispy and brown on both sides.
Despite using coconut flour AND actual coconut, the coconut flavor is not strong in these.
We ate ours with a home-made honey mustard sauce.
