I’m on the 3rd day of my Whole 30, and, I’m starving. I want to eat EVERYTHING. Every dream I had last night of was making pizza. With lots and lots of cheese. And, stocking my wine fridge. Yeah.
So…what’s for breakfast? I need filling. I need flavorful. I need quick, easy, and most importantly, I need Whole 30 compliant!
This morning it’s sweet and spicy sweet potato eggs in a nest, half an avocado, and coffee. Always more coffee.
I shredded one small sweet potato with my handy dandy mandolin. I meant to set it to smaller shreds, but ya know, things happen.
I heated a heaping tablespoon of coconut oil over medium heat in a small cast iron skillet. When the oil was melted and hot, I added in my sweet potato, spreading it evenly in the pan. I used salt, cinnamon, and chipotle powder to season my potato. This cooked til it was soft, and just barely getting a little brown around the edges.
Next step was to make a bit of a “nest” spreading my potatoes out and leaving a hole in the center for my eggs. I cracked in 2 eggs, turned down my heat just a touch and let that start to cook up. Added a bit more chipotle to my eggs and patiently waited. When the eggs started to look mostly solid, but, before the potatoes could over-cook I added a few tablespoons of water to my hot pan, and covered, so that the eggs could solidify on top with the steam, but not burn the potatoes while waiting.
