I used to love pasta. LOVE IT. I did a stint as a vegetarian ( a very bad vegetarian), and I’m sure pasta was one of my main food groups. Shameful. In the last few years leading up to all my dietary/lifestyle changes any time I’d eat pasta I’d just feel….gross. Bloated, too full, upset stomach. Did I stop eating it? Heck no! I just ate it less. So, instead of a weekly pasta dish we’d only have it 2 times a month. Cutting it out would make too much sense, right?
With a huge dietary change, cutting out ALL grains/legumes/sugar it was time to break up with pasta. I felt a bit sad, but, I knew it had to happen. No surprise cutting it (and all that other stuff too) out changed my life. No more IBS, no more achey joints, no more headaches. All gone. All of it. More energy. Better headspace. SO.MUCH.HAPPIER.
Since then I’ve found wonderful pasta work-arounds, and not only do I not miss pasta at all, I much prefer the veggie versions! I’ve shared my zoodles on here, but I’ve been on a spaghetti squash kick and I’m in love.
Last night I cooked up a big squash, split it not quite evenly and had the bigger portion for dinner. I first mixed it with a little butter and fresh parsley.
Delicious just like that, really, but, even better topped with some Shrimp Scampi. Oh my goodness.
Grilled shrimp, butter, parsley, garlic, lemon, cayenne, salt, and pepper on a bed of spaghetti squash “pasta”. What’s not to love?
This morning that second half got used up quickly. The little one and I fried up some bacon, cut it into small pieces, shredded the second half of squash into that, sauteing until nice and warm. Added some salt and pepper, and topped with a little Parmesan cheese. Yum!
It took me far too long to realize that food shouldn’t just TASTE good, it should also make me FEEL good. It should power my body, it should make me feel strong and healthy. A sign of a good meal is NOT laying on the couch for 3 hours afterwards like a slug. Who needs pasta? NOT ME!
